Ingredients Serving: 4

  1. For the hummus -roasted Beetroot 2 medium sized
  2. Dry roasted chickpea powder 1/2 cup
  3. Crushed garlic 3-4
  4. Juice of 1 lemon
  5. Salt a pinch
  6. Cumin powder 2 tsp
  7. Olive oil 1/4 th cup + 2 tsp
  8. For the Grilled Sandwich - Chopped and boiled carrots,beans, cauliflower, potatoes.
  9. Cucumber 1 sliced
  10. Onion 1 sliced
  11. Oilve oil 2 -3 tsp
  12. 1/2 tsp Pepper powder
  13. 1tsp cumin whole
  14. 1 tsp chat masala
  15. Salt to taste
  16. Sliced Brown Bread slices 8

Instructions

  1. Beet root humus -To roast the beet ,peel and cut the beets into half, and wash them. Then take a bowl put 1-2 tsp of olive oil, a pinch of salt and smear it on the beets, before you start doing this, Preheat your oven at 400 degrees Fahrenheit or approximately 200 degree centigrade.
  2. As you finish mixing the oil and salt, place a baking sheet over the baking tray And place the beets.Then put them on the second rack of your oven. Let it get cooked for around 40- 45min, but do check with a skewer in between. If you can insert the skewer comfortably inside the beetroot. It's done. As the beets roast, take them out and cool for minimum 10 mins.
  3. in the meanwhile dry roast the chick pea powder. Cool it. In a blender put the roasted beet, roasted chickpea powder, lemon juice, garlic , cumin powder and make a paste as smooth as possible. Taste it to adjust lemon juice or olive oil for consistency too. Use it as spread for anything.
  4. Vegetable grilled Sand which - Boil and mash the vegetables , in a wok put 1 tsp olive oil, sprinkle 1/2 a tsp whole cumin , add the mashed vegetable, and cook for a min, add salt to taste, add 1/2 tsp pepper powder and mix well ,add 1 tsp chat masala and mix.
  5. Now cut the sides of 2 slices of Brown Bread, apply olive oil on both sides, on one slice add the vegetable, add the hummus about 1-2 tsp or more, add the cucumber and onion slices, place the other slice of bread over it, press and grill it on a preheated sandwich griller. Team it with soup and your lunch is ready.
