ABOUT Raw banana katori/ basket chaat RECIPE

Katori means a small cup. It is prepared in a variety of ways, using either all-purpose flour or potatoes.But here to make it Jain food (No potato, No garlic, No Onion), I am using raw bananas to make the baskets! Sprouts in combination with raw mangoes, pomegranate seeds and grapes is giving a twist to the dish!

Ingredients Serving: 4

  1. For the baskets
  2. 2 cups thickly grated raw bananas
  3. Oil for deep frying
  4. For the stuffing
  5. 2 cup Bean sprouts, boiled
  6. 1/2 cup boiled and mashed raw bananas
  7. 1 tsp finely chopped green chillies
  8. 1 tsp chopped coriander leaves
  9. 1 tsp red chilli powder
  10. 1 tsp pani poori masala
  11. 1/2 tsp chaat masala
  12. 1/2 tsp white pepper
  13. 1 tsp dry mango powder
  14. Salt to taste
  15. Serve along with
  16. Coriander mint chutney
  17. Dates Chutney
  18. Curd
  19. Garnishing:
  20. Sev
  21. Coriander leaves
  22. Raw mangoes, finely chopped
  23. Pomegranate seeds
  24. Black Grapes

Instructions

  1. To Make Baskets:
  2. Soak the grated raw bananas in a water for 10 minutes, then drain the water and clean it using a cloth.
  3. Divide it into 10 equal portions.
  4. Take one of the portion and place it into medium size tea strainer and top with second strainer (as shown below)
  5. Hold firmly and deep fry it till it becomes golden brown (as shown below).
  6. Remove from the heat, put it on tissue paper and remove the basket from strainer very carefully after few seconds.
  7. Prepare all the baskets likewise and keep aside.
  8. To Make Stuffing:
  9. In a mixing bowl, add all the ingredients mentioned in STUFFING and mix it well.
  10. Keep it aside.
  11. Serving:
  12. On each basket, put the stuffing first, then add some green and dates chutney and curd and garnish it coriander leaves, sev, raw mangoes, pomegranate seeds and black grapes.
  13. Prepare others as required.
  14. Enjoy your yummiest chaat!
