This dish belongs to Himachal. It is a thin gravy of curd with spices and urad dal balls.

Ingredients Serving: 10

  1. For pakoris
  2. Skinless urad dal 1 cup
  3. Cumin powder 1 tsp
  4. Salt 1/4 tsp
  5. Oil for frying
  6. For gravy
  7. Curd 1 bowl
  8. Cumin seeds 1 tsp
  9. Coriander seeds -1 tsp
  10. Ginger grated 1 tsp
  11. Gram flour 1 tbsp
  12. Mustard seeds 1 tsp
  13. Turmeric powder 1/4 tsp
  14. Garam masala 1/2 tsp
  15. Salt as per taste
  16. Refined oil -1 tbsp
  17. Freshly chopped coriander leaves -2 tsp
  18. Water 1 cup

Instructions

  1. Soak urad dal whole night. Next day drain excess water from it. Make paste of it. Then to it add salt ,cumin powder. Mix all with hand and move in one direction for 2-3 minutes.
  2. Then wet your hands with water .
  3. Take small amount of batter in hand .Give it round shape and make a hole in centre.
  4. Deep fry them in oil at medium flame till golden brown from both sides .
  5. Repeat the process till you get all pakoris ready.
  6. For the gravy heat oil in pan. Then add red chilli, cumin, coriander and mustard seeds. Then add turmeric powder, garam masala and ginger. Finally add curd in which gram flour , water and salt is mixed.
  7. Keep on stirring the gravy continuously till first boil comes.
  8. Cook for 5-8 minutes .Switch off gas.
  9. Add pakoris to it. Garnish with coriander leaves. Let it rest for 15 minutes. Then serve.
