Ingredients Serving: 4

  1. Refined flour 300 gram
  2. Split gram pulses 200 gram
  3. Hing 1/2 teaspoon
  4. Salt to taste
  5. Fennel seeds 2 teaspoons
  6. Red pepper powder 2 teaspoons
  7. Dry mango powder 1 teaspoon
  8. Garam masala powder 1&1/2 teaspoon
  9. Kasoori methi 1 teaspoon
  10. Coriander powder 2 teaspoon
  11. Cumin seeds 1 teaspoon
  12. Oil 2 tablespoons for moin in dough
  13. Oil 2 tablespoons for making filling
  14. Oil 2 tablespoons for aalu jhol
  15. Oil for frying kachoris
  16. Potatoes 5 big size
  17. Tomatoes 4 medium size
  18. Green chillies 2
  19. Ginger 1 inch
  20. Green coriander leaves 2 tablespoons

Instructions

  1. Wash and soak lentils for 2 hours
  2. Drain and grinded coarsely
  3. In a pot take the flour
  4. Add 1/2 teaspoon of salt and oil for moin
  5. Knead the dough like that of chapati
  6. Cover with a cloth and keep aside
  7. Now in a pan take oil for making filling
  8. Keep it on medium heat
  9. Add half of the hing
  10. Add grinded lentils paste
  11. Fry till golden
  12. Now add fennel seeds powder,1 teaspoon salt
  13. Add half of the chilli powder
  14. Add dry mango powder and half of the garam masala
  15. Mix well and turn off the flame
  16. Now take a small portion of the dough
  17. Make a ball and roll it by rolling pin
  18. Fill 2 teaspoons of filling and seal it
  19. Now make all the same way
  20. Deep fry on medium heat till golden and crispy
  21. Boil and peel the potatoes
  22. Chopped potatoes
  23. Make a puree of tomatoes, ginger and green chillies
  24. Put a pan on heat
  25. Add oil for aalu jhol
  26. Add remaining hing
  27. Add cumin seeds
  28. Add tomato puree
  29. Add coriander powder, chilli powder,kasoori methi and garam masala powder
  30. Stir well till oil separate
  31. Now add 1 glass of water
  32. Add chopped potatoes
  33. Cook for 10 minutes at sim
  34. Now turn off the flame
  35. Garnish with green coriander leaves
  36. Serve kachori with aalu jhol
