ABOUT Harrisa African Chicken on Skewers RECIPE

When chicken is marinated in Harrisa an African spice paste and Pan fried gives a delicious smoky subtle heat ti these melt in mouth kebabs

Ingredients Serving: 4

  1. Harrisa paste
  2. Dry red chillies 10
  3. Cumin seeds 1tsp
  4. Coriander seeds 1tsp
  5. Fennel seeds 1/2tsp
  6. Garlic 1 tsp
  7. Raw papaya paste 2 tsp (optional)
  8. Olive oil 3/4cup
  9. Marination -
  10. Yoghurt 1cup
  11. Garlic paste 1 tsp
  12. Ginger paste 1 tsp (optional )
  13. Salt to taste
  14. Lemon juice 1 tbsp
  15. Honey 1 tsp
  16. Boneless chicken 500gms(thinly sliced)
  17. Oil 2tsp

Instructions

  1. Soak dry red chillies in hot boiling water for an hour
  2. Roast coriander seeds ,fennel,jeera for 3-5 minutes on a pan
  3. In a mixer put the drained red chillies ,roasted seeds,garlic,olive oil and grind into fine paste
  4. The Harrisa paste is ready
  5. Then mix curd,ginger garlic paste, salt,Harrisa paste,honey papaya paste and lemon juice
  6. Marinate the chicken in the above paste and leave overnight
  7. Heat a non stick pan
  8. Add oil and put the chicken skewers and cook on slow heat covered
  9. Turn after 10 minutes
  10. When soft and brown, serve hot with tomato sauce
