Yellow Pumpkin Fry

Ingredients Serving: 2

  1. 1 cup yellow pumpkin chunks
  2. 1 onion finely chopped
  3. 1 tsp turmeric powder
  4. 2 red dry chilli broken into bits
  5. 1/2 tsp mustard
  6. 1/4 tsp hing
  7. few curry leaves
  8. Salt to taste
  9. 1/4 cup grated fresh coconut
  10. 1 tbsp oil

Instructions

  1. Heat the the pan add oil
  2. When oil is hot add mustard when it starts crackle, add onion stir and add broken red chilli bits. Stir now, add hing. stir, add curry leaves, onion, turmeric and stir for a minute on low flame.
  3. Add washed pumpkin chunks. Stir well and add salt. Stir then sprinkle water. Cover and cook for 5 minutes. Switch off the flame
  4. Easy and tasty yellow pumpkin is ready to serve with chapati or with sambar rice.
