ABOUT Cilantro Lime Rice with Black Beans RECIPE

This is a mildly flavored rice but packed with nutrients. Usually this rice is packed in a burrito with the various accompaniments like caramelized onions, peppers, chicken, steak, etc. and topped with sour cream, hot salsa, and guacamole. This dish makes a great burrito bowl.

Ingredients Serving: 3

  1. 2 cups cooked long grain rice
  2. 1 Large onion chopped
  3. 2 green chilies
  4. 1 red bell pepper (or green) chopped
  5. 1 can black beans washed and drained
  6. 1/2 cup chopped cilantro
  7. Juice of 1 lime
  8. 1-1/4 tsp garlic powder
  9. 1 or 2 chipotle adobo chili chopped finely
  10. 3 tbsp oil
  11. Salt to taste
  12. Water as per required quantity (1 cup rice and 2 cup water)
  13. Handful of Grated cheese

Instructions

  1. Heat oil in a skillet. Add green chilies and chipotle chili.
  2. Add onions and saute till the onions sweat and turn translucent.
  3. Add peppers and black beans. Stir fry for a minute.
  4. Add garlic powder, lime juice, salt to taste, and cilantro reserving some for garnish.
  5. Add rice and stir well to mix all. Cook for few minutes till steaming (approximately 5 minutes) on low heat.
  6. Garnish with cheese and cilantro before serving.
