Ingredients Serving: 4

  1. Basmati rice - 1 big glass
  2. Red, Yellow & Green Bell peppers - 1 / 4 th cup each (cut into small pieces )
  3. Onion - 1 cut small
  4. Tomato - 1 cut small
  5. Carrot - 1 cut small
  6. Sweet corn - 2 to 3 tbsp
  7. Spring onion- half cup (chopped fine)
  8. Baby corn - 2 to 3 cut small
  9. Purple Cabbage - 1 / 4 th cup finely chopped
  10. Butter - 2 tbsp
  11. Oil - 2 tsp
  12. Pepper powder - half tsp
  13. Garlic - 2 to 3 pods
  14. Green chilly - 2 cut fine
  15. Soya sauce - 1 tsp(optional )
  16. Salt to taste

Instructions

  1. Take a big vessel. Keep water to boil. In the meantime wash the rice & soak for some time
  2. When it starts boiling add the rice and put a little salt and cook till 3/4 th done Drain & keep aside.
  3. Spread the rice on a plate so that it does not stick to each other.
  4. Take a big kadai. Put butter and oil and when hot add chopped garlic, green chilly & spring onions & onion.
  5. Saute well for a few minutes. Add the chopped tomato. Put pepper powder & soya sauce.
  6. Now add the other chopped veggies and cook for a few minutes on high flame.
  7. Now add the cooked rice and gently mix everything.
  8. When done turn off the gas
  9. Garnish with spring onion . Serve hot with ketchup or raita
