ABOUT Gooseberries/Amla Fool RECIPE

A fool is a classic British dessert. Traditionally, fruit fool is made by folding stewed fruit into sweet custard or whipped cream. It's very easy to make and it's fruity, fluffy and tangy and sweet, bursting with flavours.

Ingredients Serving: 3

  1. 200 gms Gooseberries
  2. 3 tbsp sugar
  3. 100g hung yogurt
  4. 2 tbsp icing sugar
  5. 1 tsp vanilla essence
  6. 100ml amul cream

Instructions

  1. Wash and pat dry gooseberries/amla.
  2. Chop it into pieces and deseed them.
  3. Put the gooseberries and sugar in a pan with a little water.
  4. Heat gently, stirring, then bring to a simmer and cook until the fruits soften.
  5. Squash the gooseberries with a potato masher or fork until pulpy.
  6. Cool and then chill until cold in the fridge.
  7. Put the hung yoghurt in a bowl.
  8. Beat it with the icing sugar and vanilla until smooth.
  9. Gently whisk in the cream (it will thicken as you whisk so don't overbeat it).
  10. Now mix in the gooseberries pulp gently. Reserve some for garnish.
  11. Spoon it in serving glasses.
  12. Garnish with some more gooseberry pulp and mint sprig.
