ABOUT Mint leaves/Pudhina Puli Kuzhambu RECIPE

If you have so much mint leaves that you couldn't use up, then try this tasty mint pulikuzhambu and you will definitely enjoy the taste. I learned this recipe from a tv cookery show during my college days. This dish takes only 20 minutes from start to finish and it gives you a healthy dish.

Ingredients Serving: 3

  1. 1 cup mint leaves or 50 to 60 mint leaves
  2. 10 small onions
  3. 10 Garlic cloves
  4. 1 tbsp tamarind
  5. 1/4 tsp fenugreek
  6. 1/4 tsp mustard
  7. 1/4 tsp urid dal
  8. 1/4 tsp turmeric powder
  9. 3 tsp sambar powder
  10. 1 tsp powdered jaggery
  11. 4 tbsp sesame oil
  12. Salt
  13. To roast and grind:
  14. 1 tsp urid dal
  15. 1 1/2 tsp white sesame seeds
  16. 1 dried red chilly

Instructions

  1. Heat a pan and dry roast urid dal, white sesame seeds and red chilly. When it cools powder them coarsely.
  2. Soak the tamarind in hot water and extract the juice with 1/2 cup of water.
  3. Heat sesame oil in a kadai and add fenugreek, mustard and urid dal. Allow them to crackle and add the small onions and garlic. Saute it till it turns light golden brown.
  4. Then add the mint leaves and saute it till the mint leaves turn dark green in colour.
  5. Then add the tamarind juice, required salt, turmeric powder and sambar powder. Keep in medium flame and boil until it gets medium thick consistency.
  6. When it gets thick add the powdered jaggery and the roasted powder. After adding these ingredients keep it for a gentle boil and transfer it to the serving vessel.
  7. Serve it with rice and drizzle few drops of sesame oil over the rice with seppankizhangu ( colocasia) fry.
