Ingredients Serving: 4

  1. 2 cups packed fresh mint / pudina leaves( soarted n washed)
  2. A golf ball sized tamarind ( soaked in water)
  3. 4 to 5 green chillies chopped
  4. 3 tbsp Sesame seeds
  5. Salt to taste
  6. 1/8 tsp turmeric
  7. 1 tbsp sugar
  8. 1/4 tsp mustard n cumin seeds
  9. 1tbsp + 1tsp oil

Instructions

  1. In a pan add a tsp of oil and heat, add the green chillies, sesame seeds and toast the sesame seeds until golden.
  2. Now add the mint / pudina leaves saute until they change color. Turn off the flame and let the cool.
  3. In a blender - add the roasted ingredients, soaked tamarind, salt, sugar and turmeric. Grind them into a paste and add water if required.
  4. Pour into a bowl and add the tempering made with mustard and cumin seeds. Its ready to be served as a spread or as a dip or as a chutney with plain rice.
  5. Love the freshness and minty flavor this provides.. Sugar helps in balancing the sour taste of tamarind and not to forget the sesame that provides a texture to the chutney. Perfect for those lazy days when you want to make something in a blink !!!
