ABOUT Jalapeño Cheese Corn Balls with Schezwan Sauce RECIPE

Asian starter recipe with Chinese sauce. It's a fusion recipe.

Ingredients Serving: 4

  1. 1 cup semi crushed American corn
  2. 4 tablespoon pickeled jalapeno
  3. 2 cups milk
  4. 1/2 cup plain flour
  5. 4 tablespoon butter
  6. 1 tablespoon chilly flakes
  7. 1 tablespoon mixed herbs
  8. 2 tablespoon chopped fresh parsley
  9. salt to taste
  10. 1/ 4 cup thin cornflour slurry
  11. 1 cup bread crumbs
  12. oil to deep fry
  13. For the sauce:
  14. 2 tablespoon Kashmiri red chili paste
  15. 1 teaspoon celery
  16. 2 tablespoon chopped garlic
  17. 2 tablespoon chopped ginger
  18. 1 tablespoon vinegar
  19. 1 teaspoon sugar
  20. 1/4 cup oil
  21. 1 tablespoon red chili sauce
  22. 1/2 teaspoon soya sauce (optional)
  23. salt to taste
  24. 1/2 cup water

Instructions

  1. Heat butter in a pan.
  2. Add plain flour and saute for a minute.
  3. Add milk and stir continuesly.
  4. Make a thick batter. Cool completely.
  5. Now add semi crushed corn, salt, chilly flakes, mixed herbs and chopped fresh parsley. Mix well.
  6. Make a lemon sized balls.
  7. Add this balls into corn flour slurry and roll into bread crumbs.
  8. Freeze it for an hour.
  9. Now deep fry it. Serve it with schezwan sauce.
  10. For the sauce:
  11. Heat oil in a pan. Add chopped garlic and ginger. Saute for a minute.
  12. Now add Kashmiri red chili paste and saute for a minute.
  13. Now add red chili sauce, salt, sugar, vinegar, water and bring to a boil.
  14. Now add cornflour slurry and mix well.
  15. Your sauce is ready.
