Ingredients Serving: 4
1 cup cooked white rice
1 lemon
2 tbsp butter
Salt to taste
1 tbsp red chilli sauce
1 tbsp tomato sauce
1 tbsp schezwan sauce
1 carrot, cut into long pieces
1 potato, cut into long pieces
1 small piece of cauliflower
1/2 cup peas
1 onion chopped
1 tbsp spring onions, chopped
1 tomato, grated
1 tsp ginger-garlic paste
1 tsp garam masala powder
1 tsp chat masala
Coriander for garnishing
For the Raita:
1 cup beaten curd
2-3 green chillies
1 cup coriander leaves
1 cup mint leaves
Salt to taste
1 carrot chopped
1 onion chopped
1/2 tomato chopped
Instructions
In a thick bottomed pan, add in butter and fry the onions till they turn light pink in colour.
Then add in the grated tomato and fry it nicely till the oil separates itself. Next add in the salt, garam masala powder, coriander, chat masala powder, red chilli sauce, schezwan sauce and mix it well.
Next add in the peas, carrots, spring onions, potato, cauliflower and mix well till it becomes soft.
Now add in the cooked white rice and mix it well. Then add in 1 squeezed lemon juice on top of the rice and mix it well.
To prepare the raita, in a bowl add in the beaten curd and salt to taste.
Then add in the green paste (coriander, mint leaves, green chillies). Mix it well. Then add in the chopped onions, tomato, carrots and mix well.
Serve the pulav and raita together.
