Ingredients Serving: 4

  1. for cooking rice
  2. 1cupbasmati riceor long grained rice
  3. 4cupsof waterfor cooking the rice
  4. 2to3drops of oil
  5. Salt as required
  6. FOR TAWA MASSALA
  7. 1medium capsicum(green bell pepper or shimla mirch) - chopped
  8. 2large tomatoesOr 150 grams tomatoes - chopped
  9. 1medium onionOr 50 grams onions- chopped
  10. ½inchginger (adrak) + 2-3 garlic (lahsun)- made into a paste in a mortar-pestle Or 1 teaspoon ginger garlic paste
  11. ¼teaspoonred chili powder(lal mirch powder) or add as required
  12. ¼teaspoonturmeric powder(haldi)
  13. 2teaspoonpav bhaji masalaor add as required
  14. ½teaspooncumin seeds(jeera)
  15. 2tablespoonbutteror oil or half-half of both
  16. 1small to medium carrot(gajar) - chopped
  17. 1medium potato(aloo) - chopped
  18. ½cupgreen peas(matar) - fresh or frozen
  19. ½teaspoonlemon juiceor as required
  20. a few chopped coriander leaves(dhania patta) or parsley leaves
  21. Salt as required

Instructions

  1. FOR RICE
  2. rinse the rice grains till the water runs clear of starch. rinsing for a while, you will come to a stage when the water will become transparent during the rinse. if there is starch in the water, then the rice becomes sticky.
  3. soak the rice in enough water for 20-30 mins
  4. pour 4 cups water in the rice. add salt and few drops of oil.
  5. stir. cover and cook the rice till the rice grains are cooked well.
  6. the rice grains should be separate also cooked well
  7. if the water begins to froth pushing the lid, then remove the lid or partly cover the pot with lid and cook the rice.
  8. don't cook the rice too much or make them mushy. this will spoil the texture of the pulao
  9. in a strainer, add the cooked rice and let all the water drain away
  10. gently fluff the rice with a fork.
  11. once all the steam has passed from the rice, cover the rice with a lid so that the rice grains on top don't dry out.
  12. let the rice cool and you can proceed with the rest of the recipe.
  13. FOR TAWA MASALA
  14. steam the carrot, potato and green peas till all of them are cooked well in a steamer, pan or pressure cooker.
  15. peel and chop the carrot and potatoes. keep aside
  16. in a pan or kadai/wok melt the butter. add the cumin and fry them till they get browned
  17. add the finely chopped onions and saute till translucent
  18. add the ginger garlic paste and saute till the raw aroma goes away
  19. then add the finely chopped tomatoes and capsicum/bell pepper.
  20. stir and add all the spice powders - turmeric, red chili powder and pav bhaji masala
  21. stir again and saute the whole mixture till you see butter releasing from the sides.
  22. add the chopped potato, carrot and peas. sprinkle salt and stir.
  23. garnish with coriander leaves and sprinkle some lemon juice on the tava pulao.
  24. serve tava pulao hotwith onion tomato raita or cucumber raita or plain yogurt accompanied with papad and pickle
