A delicious noodles dish that is crispy and served with vegetables and tangy sauces. It can be said that it is a complete Chinese meal.

4 cups of boiled hakka noodles
1/2 tbsp cornflour to marinate the noodles
Oil for deep frying
1/2 cup sliced onions
1/2 cup capsicum strips
1/2 cup shredded carrots
1/2 cup shredded cabbage
1 tbsp cornflour
2 tbsp oil
1 cup tomato ketchup
2 tsp chilli sauce
1 tbsp vinegar
1 tbsp sugar
Black pepper 1 pinch
Salt to taste
Instructions
Heat oil to deep fry the boiled noodles in a kadhai. Also marinate the noodles in 1/2 tbsp cornflour.
Add the noodles and spread it to form a layer, fry till it turns crispy and light golden brown in colour from both the sides. Then take it out and drain it on a paper. Continue this process with the remaining noodles. Keep it aside.
Dissolve 1 tbsp cornflour in 1 and 1/2 cup of water in a bowl and keep it aside.
Take a non-stick pan and heat oil in it, then add in the onion and saute for a few minutes. Next add in the capsicum, cabbage, carrots and saute it on medium flame for 1 minute.
Now add in the tomato ketchup and chilli sauce, mix it well and cook it for a few more minutes.
Add the corn flour water, vinegar, sugar, black pepper powder, salt and mix it well. Cook it for a few minutes on a medium flame.
Turn off the flame. Serve it by placing the crispy noodles in a serving dish and top one portion of the chop suey over it.
