Chocolate and sesame loaf cake

ABOUT Chocolate and sesame loaf cake RECIPE

Cake is very easy and even though the sesame mix was incredibly thick, it rose beautifully.

Ingredients Serving: 6

  1. 200 gms butter
  2. 200 gm dark chocolate, chopped
  3. 200 gm golden caster sugar
  4. 100 ml strong espresso
  5. 100 ml sour cream
  6. 2 eggs
  7. 200 gms self-raising flour
  8. 150 gms tahini
  9. 1 heaped tsp baking powder
  10. 150 ml strong black coffee
  11. 150 gm golden castor sugar
  12. 1/4 tsp cinnamon
  13. 2 tbsp milk
  14. 200 ml double cream
  15. 40 gm butter
  16. 200 gm dark chocolate, chopped
  17. 4 x 30 gm pack sesame snaps

Instructions

  1. Heat oven to 180 degree centigrade. Grease two loaf tins and line with baking parchment.
  2. First, make the chocolate cake mixture. Put the butter and chocolate in a large heat proof bowl set over a pan of simmering water, stirring occasionally.
  3. Put all the other ingredients in a large mixing bowl and, when the chocolate and butter have melted, pour over and mix with an electric whisk until smooth and well combined. Set aside and rinse the beaters.
  4. In another large bowl, add all the sesame cake ingredients, then combine with an electric whisk until smooth.
  5. Divide between the two tins. Level the top, then swirl a skewer through the mixture to create a marbled effect. Bake in the middle of the oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Leave the cakes to cool completely.
  6. For topping: Heat the double cream and butter together gently in a small pan until just simmering, then remove from the heat and add the chocolate. Stir until the mixture is smooth, then place in the fridge for 20 minutes to firm up.
  7. Beat well with a wooden spoon, then transfer to a disposable piping bag. Snip the end off to make a wide opening, then pipe thick, overlapping zigzags across the cakes.
  8. Cut the sesame snaps into shards and arrange on top, scattering over any crumbs, then serve.
