ABOUT Rawa/Sooji ki Kachori RECIPE

Sooji dough balls stuffed with spicy onion potato mixture and deep fried.

Ingredients Serving: 8

  1. Sooji 2 cups
  2. Ajwain 2 tsp
  3. Ghee 2 Tbsp
  4. Water 1 cup
  5. Salt to taste
  6. Boiled potatoes 2 cups
  7. Finely chopped onion 1 cup
  8. Green Peas(optional) 1/2 cup
  9. Anardana 2 tsp
  10. Garam masala 1 tsp
  11. Ginger 2 tbsp
  12. Coriander powder 2 tbsp
  13. Oil for frying

Instructions

  1. Heat water in a non-stick pan, add ajwain, ghee, salt and bring it to a boil. Add sooji, mix well and turn off the heat.
  2. Transfer this mixture into a bowl, mix well and knead into a dough.
  3. In another bowl, add potatoes, onion, green chilli, peas, ginger, anardana, coriander powder, garam masala and salt to taste. Mix well.
  4. Take small equal portion of the dough, flatten it. Add some stuffing and shape them into kachoris.
  5. Deep fry the kachoris till golden brown.
  6. Serve hot with green chutney or ketchup.
