ABOUT Coconut and Powdered Nuts Modak RECIPE

Coconut also known as Shriphal is considered a sacred fruit by the Hindus which is used as an offering or used in preparing sweet delicacies and desserts during auspicious occasions as well as religious rituals. Modak made with freshly grated coconuts and powdered nuts using a modak mould. This recipe can be used to make laddoos as well as stuffing for ukadiche modak as well.

Ingredients Serving: 11

  1. 1 small Coconut, freshly grated
  2. 250 ml full cream Milk
  3. 1/4 cup Semolina
  4. 2/3 can Condensed Milk
  5. 1/4 cup Almonds + Cashewnuts, lightly toasted and powdered
  6. 1 tsp Green Cardamom/Chhoti Elaichi powder
  7. 2-3 drops Rose Essence

Instructions

  1. Bring the full cream milk to a boil on medium heat in a pan and cook on low flame till 2/3rd.
  2. In the meantime lightly toast the semolina in 1 Tbsp of clarified butter in a pan.
  3. In the same pan, lightly dry toast the grated coconut for 2-3 mins and set aside to cool.
  4. Add the condensed milk to the boiling milk and stir in continuously to avoid the milk from sticking at the bottom of the pan.
  5. Mix the coconut, powdered nuts and toasted sooji and slowly pour the dry mix into the milk, simultaneously keep stirring.
  6. Let cook for some time until the mixture becomes thick and leaves the sides of the pan and keep stirring continuously as it’s cooking.
  7. Add the elaichi powder, rose essence and mix well, turn of the flame and let it cool.
  8. Once it has cooled down, grease and ready a modak mould with some ghee or oil and close it.
  9. Take one portion of the mix and put it inside the cavity of the mould.
  10. Demould and set aside.
  11. Repeat steps 8 to 10 with the remaining mixture.
  12. Once done plate and enjoy the modaks.
