Ingredients Serving: 3

  1. Beetroot medium -2
  2. Basmati rice- 1 1/2 cup
  3. Garlic cloves 7/8
  4. 1 Onion (large) chopped
  5. 12- French beans chopped
  6. 1-carrot chopped
  7. 1- capsicum chopped
  8. 1/2 Cup Green Peas
  9. 100gms paneer(small cubes)
  10. 3-spoons oil (app)
  11. 1/2tsp jeera
  12. 2 geen chilles(optional)
  13. Red chillie powder-1/2tsp
  14. Salt to taste
  15. 1-tsp garm masala (Everest)
  16. Chopped green coriander leaves

Instructions

  1. Boil rice with green peas and salt. Keep aside.
  2. Meanwhile make a paste of beetroot, garlic and green chillies.
  3. Take a kadai and heat oil in it, fry paneer with a little salt and keep aside.
  4. In the remaining oil add jeera, onions, carrots, beans and saute for 3 minutes. Add capsicum, saute for 1 minute. Add beetroot garlic paste, add salt, red chilli powder, garam masala - saute for 2 more minutes.
  5. Add rice,mix lightly and add paneer cubes.
  6. Cover and keep it on sim gas for 2 minutes.
  7. Garnish with coriander leaves.
  8. Serve hot with papad, curd and pickle of your choice.
