Ingredients Serving: 5

  1. 2 cup white rice (I used left over rice)
  2. Onions 2
  3. Tomatoes 2
  4. Green chillies 3
  5. Coriander powder 1/2 tsp
  6. Jeera powder 1/2 tsp
  7. Red chilli powder 1/4 tsp
  8. Haldi/ Turmeric 1/2 tsp
  9. Peanuts 3 tbsp
  10. Lemon juice 2 tbsp
  11. Oil 2 tbsp
  12. Garlic pods 3
  13. Mustard seeds 1 tsp
  14. Jeera 1 tsp
  15. Coriander leaves, a handful
  16. Few curry leaves
  17. Salt and sugar as per taste

Instructions

  1. Take a kadai, heat oil in it, add in the garlic, mustard seeds, let them crackle, then add the jeera, curry leaves. Saute them for a minute, after that add the peanuts and fry it for 3 mins.
  2. Add in sliced onions and fry till it becomes transparent, then add the finely chopped green chillies and chopped tomatoes. Fry it for 2 mins.
  3. Add all the powders and fry it for a minute.
  4. Next add the lemon juice, salt, sugar and rice. Gently mix them all together and cook for 2 mins. Then add the fresh coriander leaves.
