ABOUT Palak Potato Vada RECIPE

A little variation in our all time favourite potato vada.

Ingredients Serving: 5

  1. 1/2 kg potatoes, boiled and mashed
  2. 1/2 bunch spinach leaves, finely chopped
  3. 1/4 tsp Asafoetida
  4. 4 tbsp coarsely grounded garlic-ginger and green chillies paste
  5. 1/2 tsp sugar
  6. Salt as per taste
  7. 1/2 tsp turmeric powder
  8. Oil for frying
  9. Batter Ingredients:
  10. 1 cup besan/ chickpea flour
  11. 1/2 tsp turmeric powder
  12. 1 tsp chilli powder
  13. Salt as per taste

Instructions

  1. Boil and mash the potatoes.
  2. In a pan, heat 1 tbsp oil. Add the hing powder, garlic-ginger chilli paste, salt, turmeric powder, sugar and spinach leaves. Cook till it becomes dry. Mix the smashed potatoes with this mixture.
  3. Make a batter by mixing the listed ingredients together.
  4. Make balls of this potato mixture, dip them in the batter and deep fry these vadas.
  5. Serve them hot for best taste.
