Lauki/ Bottle Gourd - 1
Onions- 2 (long and thin sliced)
Green Chillies - 2
Ginger-Garlic paste 1 teaspoon
Peanuts 1 tablespoon
Sesame seeds 1 tablespoon
Grated coconut 1 tablespoon
Curry leaves 10
Mint leaves 10
Coriander leaves- few
Turmeric powder 1 teaspoon
Red chilli powder 1 teaspoon
Coriander powder 1 teaspoon
Cumin seeds 1 teaspoon
Mustard seeds 1 teaspoon
Oil 6 tablespoon
Curd 1 cup
Salt to taste
Sugar 1/2 teaspoon
Instructions
To make the paste, in a pan add the peanuts and roast. Now add the sesame seeds and roast it as well, then add the grated coconut and roast. Blend this mixture with water to make a smooth paste.
To make the spice mixture, in a bowl add the turmeric, red chilli and coriander powder. Now add a little water to make a fine paste.
Take the lauki, peel and cut in 1/2 inch rounds. Then wash them and shallow fry.
Now in the remaining oil, add in the mustard seeds. Once they splutter, add in the cumin seeds, onion and cook till it's golden in colour.
Now add the ginger-garlic paste and let it cook for a few minutes. To this, add in the spice mix and let it cook till the oil separates.
Now add the paste with 1 glass full of water. Mix it well and bring it to boil. Then lower the flame and cook it for 30 mins.
Add curd and mix it well. Then cover and cook till the oil separates itself.
Add in the mint leaves and lauki along with salt to taste and sugar. Cover and cook it for a few minutes.
Serve it warm.
