First time i tried different states in north indian cuisine.Its really very hard to get veg recipes from north east states but somehow managed it.some recipes are tried from blog.

Toor dal -1/2 cup
Ghee -1/2 tbsp
Jaggery-1/2 tsp

Paanch Poran Tarkari(Arunachal Pradesh):
Potato -1,Peeled and cubed
Brinjal-,Sliced
Paanch Poran-1 tsp
Bay leaf -1
Green chillies-2,chopped
Turmeric Powder-1/4 tsp
Milk -1 tsp
Sugar -1/2 tsp
Mustard oil -1 tsp
Kashmiri Baignan(Kashmir)
Brinjal -1 ,large and sliced lenghtwise
Tomato -2,finely chopped
Red chilli powder-1 tsp
Oil - for fry
Bilhari Tok(Assam):
Ripe tomates-3,finely chopped
Mustard Oil-1 tbsp
Onion -1,finely chopped
Paanch Poran-1 tsp
bay leaf-1
Dry red chilli-1
Turmeric Powder-1/4 tsp
Jaggery- 1/4 tsp
Chaas :
Thick Curd-1 cup
Cold water _3 cups
Black salt-1 tsp
Roasted cumin powder-1 tsp
Mint leaf- for garnish
Naaspati Ki Sabzi(Himachal Pradesh):
Pears -2,peeled and cubed
Mustard oil -1 tsp
Ginger Garlic paste-1/4 tsp
Coriander seeds-1/4 tsp
Cumin seeds-1/4 tsp
Dry red chilli-2
Pepper powder-1/4 tsp
Turmeric Powder-1/4 tsp
Sugar-1/4 tsp
Paneer Kheer (Haryana):
Milk-1 cup
Crumbled Paneer-3/4 cup
Sugar-1/2 Cup
cardamom powder-1/4 tsp
Saffron- few strands
Ghee roasted cashew and Raisin- For garnish
Jeera Rice (Punjab):
Basmati-1 cup
cumin seeds -1 tsp
Ghee -1 tbsp
bay leaf-1
Cardamom-1
Cloves-3
Raw Turmeric Pickle :
Raw Turmeric- 1/4 cup ,peeled and chopped
Lemon Juice- 2 tsp
Green chilli- 1,finely chopped
Khoba Roti (Rajasthan):
Wheat flour-1 cup
Ghee -1 tbsp +2 tbsp
Salt- to taste
For salad:
Cucumber-1
Carrot-1
Instructions
Lacko Daal: Cook the dal with salt and turmeric powder with enough water.
Once it cooked add jaggery and ghee.mix it .
Paanch Poran Tarkari :Heat oil in a kadai temper with paanch poran mix,saute with Bay Leaf,chopped green chillies.
Then add the veggies,turmeric powder, salt,Milk.cook with enough water until its done.
Kashmiri Baignan:Deep fry the Brinjal until it turns golden brown.
Cook the tomatoes with salt .Once it become mushy add red chilli powder ,saute and add fried Brinjal. Mix well.
Bilhari Tok : heat oil in a kadai add paanch poran, Bay Leaf, red chilli. Saute with onion.
Then add the tomato, salt,turmeric powder. Once the raw smell goes away add jaggery and mix.
Chaas : Blend the all ingredients with salt except mint Leaf.
Pour in tall glass .
Naaspati Ki sabzi : heat oil in a kadai saute ginger garlic paste. Then add the coriander seeds, cumin seeds,Pepper powder, turmeric.
Followed by chopped pears ,salt and sugar.cook on slow flame until done.
Paneer kheer : Boil the milk Well, Then add the crumble paneer.
Once it cooked add sugar,Cardamom powder, saffron and mix. Finally garnish with roasted cashews and Raisin
Jeera Rice : wash and soak the basmati for 10mins. In a pressure cooker add ghee,temper with Bay Leaf, Cardamom, cloves, cumin seeds.
Add soaked Rice with salt and 1&1/2 cups water.cook it for 2 whistles. Once the pressure settled down fluff the Rice.
Raw Turmeric Pickle : Mix the turmeric, lemon juice, green chilli with salt and mix.
Khoba Roti : mix wheat flour, salt and 1tbsp ghee.mix and make a stiff dough by adding enough water.
Rolled out a thin circle and heat the griddle.
Put the roti on the pan,cook .flip it on other Side.
Make a design on the top by slightly punch it. Then cook it on both sides well
Then cook it on direct flame ,make sure the flame is low
Now the roti is ready and smear it remaining ghee.
Peel the Cucumber and Carrot and sliced it lenghtwise for Salad.
