ABOUT Tricolour Burfi RECIPE

A tricolour khoya burfi from Benaras. which I enjoyed in my childhood.

Ingredients Serving: 10

  1. Khoya 1 kg
  2. Bura, ground sugar 200 gms
  3. Ground cardamom 5 tsp
  4. Orange food colour
  5. Green food colour
  6. Blanched and chopped almonds 10
  7. Chopped pistachios 10
  8. Kesar a few strands

Instructions

  1. Crumble khoya into very small pieces.
  2. Mix it with half of the bura or ground sugar.
  3. Put it in a pan over a low fire and stir continuously.
  4. Keep on stirring till khoya starts melting and sugar gets dissolved.
  5. Turn off the flame, take out the khoya mixture in a tray.
  6. Allow it to cool completely.
  7. Add grounded powder to this mixture and mix it very gently.
  8. Divide the whole mixture in three equal parts.
  9. In the first part add few drops of green colour. Rub it well till the whole mixture becomes green in colour.
  10. In the second part add some kesar syrup and orange colour and rub it well till the whole mixture becomes orange in colour.
  11. Leave the third part white.
  12. Take a tray, grease it well with some melted ghee.
  13. Pour green khoya mixture in it and spread it very evenly. Allow it to set it for some time.
  14. After 5 minutes, spread the white khoya mixture evenly on it. Allow it to set for 5 minutes.
  15. Now put the orange coloured khoya mixture on the white layer, sprinkle chopped almonds and pistachios on it. Allow the mixture to set for some time.
  16. Once set, cut into desired shape and serve.
