This is a winter special pulao recipe which a little bit spicy also.

Ingredients Serving: 3

  1. Basmati rice - 1 cup
  2. Water -2 cup
  3. Fresh green peas-1.5 cup
  4. Cashew nuts-7-8 no.s
  5. Raisins-7-8 no.s
  6. Cumin seeds-1/2 tsp
  7. Green cardamom -2
  8. Cinnamon-1 inch
  9. Lawang - 3-4
  10. Star anise -1
  11. Black Cardamom-1
  12. Bay leaves-2
  13. Black pepper- 5-6
  14. Chopped Onion- 2 no.s
  15. Chopped green chilli-2
  16. Garam masala powder-1/2 tsp
  17. Dhania powder-1/2 tsp
  18. Oil -3 tsp
  19. salt as per taste
  20. Chilli powder- 1/2 tsp

Instructions

  1. Rinse and wash the rice and keep aside.
  2. Heat a pressure cooker and put oil in it and roast the cashew nuts and raisins and keep them aside.
  3. In that oil first add all the whole spices and roast for 1 minute till there is an aroma.
  4. Then add the cumin seeds and when they crackle then add the chopped onion in it and saute till they become translucent.
  5. Then add references chilli, green peas and rice and saute for 2 minutes.
  6. Then add water along with salt and all the remaining spices and cover the lid and cook till one whistle.
  7. Then switch off the flame and let the gas in it totally be remove automatically.
  8. Then mix the roasted cashew nuts and raisins and serve hot with any type of curry or raita.
