In winter we Bengali people love to make so many sweet dishes with date palm jaggery(nolen gur).The taste of nolen gur rabdi is totally different from normal rabdi. Its really very tasty with jalebi & til laddu.

Ingredients Serving: 5

  1. For rabdi, milk...1ltr
  2. Cardamom powder...1/2tspn
  3. Date palm jaggery...1cup
  4. For jalebi, all purpose flour...1cup
  5. Semolina...1/2cup
  6. Gram flour...2tspn
  7. Baking powder...1teaspn
  8. Orange food colour...2drops
  9. Sugar...1cup
  10. Water...1cup
  11. Some ready made til laddu for decoration (optional)

Instructions

  1. Boil 1ltr milk first & make it 1/4th in quantity.Add cardamom powder & date palm jaggery.Boil it another 5 to 10 minutes & switch off the flame.Rabdi is ready.
  2. For jalebi, make a thick batter of flour,semolina, gram flour ,2tspn sugar, baking powder,a pinch of salt & orange food colour.
  3. Heat oil or ghee, & deep fry the jalebis in medium flame.
  4. Make sugar syrup & dip the jalebis in it for 2 to 3 minutes & then take out.
  5. Make it cool & serve it with rabdi.In Makar Sankranti you can enjoy it with til laddu also.Its really delicious.
