Ingredients Serving: 6

  1. Karela (small sizes) 1/2 kg
  2. Onion (finely chopped) 2 large
  3. Fennel seeds 2 tsp
  4. Kalonji 1 tsp
  5. Poppy seeds 1/2 tsp
  6. Methi seeds 1/2 tsp
  7. Ajwain seeds 1 tsp
  8. Black Peppercorns 5-6
  9. Garlic paste 1 tbsp
  10. Whole red chillies 8 - 10
  11. Whole coriander 2 tbsp
  12. Green coriander chopped a fistful
  13. Juice of 1 lemon
  14. Salt as per taste
  15. Thread for tying the Karela

Instructions

  1. Slightly peel the karela and half boil them with salt.
  2. Make a slit with a sharp knife and remove the seeds.
  3. Roast all the seeds (jeera, coriander, black pepper, kalonji, fennel, poppy, ajwain, methi) and grind them.
  4. Roast the whole red chillies and add the garlic pods. Grind this mix with the ground masala.
  5. Also ground the karela seeds with the masala.
  6. Heat 1 tsp of oil and cook the chopped onions, till it is translucent.
  7. In a large bowl mix onions, masala and add lemon juice, salt, chopped coriander. Mix it properly.
  8. Fill the karela with this masala and tie it with a thread.
  9. Heat oil in a big wok and fry the karelas in batches. Do not overcrowd the wok.
