Cut all the veggies
Boil water.. Blanch the veggies for exactly 3mins
Strain out the veggies.
Spread the veggies over a cloth.. Let it dry ..keep under the sun or under fan.
cumin seeds, methi, fennel seeds, black peppercorns.
Dry roast.. For 1 min.. Then cool
Grind the dry roasted masala with mustard seeds..
Powder is ready
In a pan add 1/2 cup mustard oil and heat it..
Cool the oil and add the powdered masala, turmeric. Mix.
Add the oil to the veggies.
Add ginger, chillies to it
Add salt, chilli powder.
Add 1/2 cup vinegar to it.
Mix everything.. And its ready.
