ABOUT Mix vegetable pickle RECIPE

Goes very well with steamed rice or paratha. Can be stored for one week.

Ingredients Serving: 4

  1. Cauliflower 1/2
  2. Carrot 1
  3. Turnip 1
  4. Beans 3-4
  5. Green chilli 3-4
  6. Ginger 2 inch
  7. Mustard seeds 1 tbsp
  8. Cumin seeds 1 tsp
  9. Methi seeds 1 tsp
  10. Black peppercorns 1 tsp
  11. Fennel Seeds 1 tsp
  12. Salt 1 tbsp
  13. Turmeric powder 1 tbsp
  14. Chilli powder 2 tsp
  15. Mustard oil 1/2 cup
  16. Vinegar 1/2 cup

Instructions

  1. Cut all the veggies
  2. Boil water.. Blanch the veggies for exactly 3mins
  3. Strain out the veggies.
  4. Spread the veggies over a cloth.. Let it dry ..keep under the sun or under fan.
  5. cumin seeds, methi, fennel seeds, black peppercorns.
  6. Dry roast.. For 1 min.. Then cool
  7. Grind the dry roasted masala with mustard seeds..
  8. Powder is ready
  9. In a pan add 1/2 cup mustard oil and heat it..
  10. Cool the oil and add the powdered masala, turmeric. Mix.
  11. Add the oil to the veggies.
  12. Add ginger, chillies to it
  13. Add salt, chilli powder.
  14. Add 1/2 cup vinegar to it.
  15. Mix everything.. And its ready.
