ABOUT Mix vegetable pickle RECIPE

This veggies are mostly winter seasonal veggies. So we can preserve this as a pickle. And this pickle is really super yummy.

Ingredients Serving: 10

  1. 5 radish
  2. 5 carrot
  3. 3 cauliflower
  4. 6 small size turnip
  5. 2 cup garlic cloves
  6. 2 cup ginger chopped
  7. 1 cup slitted green chillies
  8. 4 tablespoon fennel seeds
  9. 4 tablespoon yellow musterd seeds
  10. 4 tablespoon black musterd seeds
  11. 3 tablespoon onion seeds
  12. 3 tablespoon fenugreek seeds
  13. 5 dry red chillies
  14. 2 teaspoon turmeric powder
  15. 2 teaspoon red chilli powder
  16. 4 cup musters oil
  17. 2 cup white vinegar
  18. 1/2 teaspoon asefotida
  19. Sea salt & black salt according to taste

Instructions

  1. Chopped the carrots, cauliflowers, radish & turnip as your desire shape. Wash the veggies & blanch it in salted water for 5 minutes.
  2. Then drain the access water & spread all the veggies in a cotton cloth & dried it up for 2 hours in a heat of the sun.
  3. Now coarsly grind the fennel seeds, fenugreek seeds & onion seeds. On the other hand, coarsly blend the yellow & black musterd with vinegar.
  4. Then hear the oil & add coarsly grind powder & coarsly blend musterd saute well.
  5. Add turmeric powder, red chilli powder, sea salt, black salt & asefotida saute well.
  6. Then add all the veggies along with garlic cloves, chopped gunger & slitted green chillies. Add white vinegar & mix it up well for 5 minutes. Switch of the flame.
  7. Cool it completely & add in to a clean glass jar.
