Ingredients Serving: 5

  1. Eggs 3
  2. potatoes 2 (diced)
  3. onion one sliced
  4. garlic cloves 2 chopped
  5. Ginger (chopped) one teaspoon
  6. capsicum (chopped) half cup
  7. red bell pepper( chopped) half cup
  8. coriander leaves( chopped) one cup
  9. salt as per taste
  10. red chilli powder half teaspoon
  11. pepper powder half teaspoon
  12. cumin powder half teaspoon
  13. butter 2 tablespoons

Instructions

  1. arrange all the required ingredients in a plate
  2. heat the butter in a frying pan
  3. now add potatoes and Sprinkle little amount of salt and fry till golden brown
  4. now add onion, ginger and garlic
  5. Fry it well
  6. now add capsicum and bell pepper and stir well
  7. now in a separate bowl, break the eggs and Sprinkle some salt, red chilli powder ,pepper powder and cumin powder
  8. Beat well
  9. now pour the egg mixture on the fried vegetables
  10. Sprinkle little salt if required
  11. add chopped coriander
  12. mix well,do not over fry
  13. turn off the gas
  14. serve hot with paratha, Roti
