ABOUT Onion and Egg Cake (Khagina) RECIPE

This is a recipe from Sindhi cuisine with a slight twist in presentation.This onion and egg cake is a main course dish and goes well with rotis. My son fondly calls it egg pizza. The recipe consists of poached eggs with firmly set yolk on a generous bed of sauted onions.

Ingredients Serving: 3

  1. Onions 3 large finely chopped
  2. Tomato 1 medium finely chopped
  3. Egg 4
  4. Green chillies 2 finely chopped
  5. Ginger 1/2 inch grated
  6. Turmeric powder 1/2 tsp
  7. Coriander powder 1 tsp & a pinch more
  8. Red chilli powder 1/4 tsp and a pinch more
  9. Garam masala 1/2 tsp and a pinch more
  10. Salt to taste
  11. oil for cooking
  12. A few sprigs of chopped coriander

Instructions

  1. Take a karai or flat bottom pan and put the chopped onions in it and saute in oil.
  2. When the onions turn translucent and light pink, add salt, turmeric powder, coriander powder, red chilli powder and saute for a minute.
  3. Now add the tomatoes, green chillies ,ginger and coriander leaves. Reserve some coriander leaves for later.
  4. Saute very well and add a few drops of water.
  5. Break the eggs one by one in this pan in such a way that they are spread throughout the onions
  6. Sprinkle a little salt, coriander powder, chilli powder, garam masala powder and coriander leaves.
  7. Sprinkle a few drops of water.
  8. Cover and cook on low flame for 15 minutes till the yolks are firm.
  9. Serve hot with rotis.
