Ingredients Serving: 4

  1. Gram Flour 1 Cup
  2. Semolina 1 Tbs
  3. Turmeric powder 1/4 tsp
  4. Curd 1/2 Cup
  5. Oil 2 Tbs
  6. Salt 1 Tbs
  7. Sugar 4 Tbs
  8. Citric Acid 1 Tsp
  9. Baking Powder 1 Tsp
  10. Green Chilli 4
  11. Green Coriander 1 Spoon
  12. Black Mustard 1 Tsp

Instructions

  1. Take a big bowl and add gram flour.
  2. Add Semolina, Turmeric Powder, curd, oil Salt, 1 Tbs Sugar, Citric acid in gram flour and mix well.
  3. Beat the batter for 2 minutes in 1 direction.
  4. If it is too thick then add little bit water. But it should not be so liquid.
  5. Keep the batter aside for 10 minutes.
  6. After 10 minutes add 2 glass water in a big vessel and put a trivet in the vessel.
  7. Grease a tin from inside.
  8. Put baking soda in batter and mix well and immediately transfer the batter into the greased tin.
  9. Put this tin on the trivet and cover the vessel with a lid for 20 minutes.
  10. After 20 minutes, check with a toothpick or knife, if it is clean, khaman is ready.
  11. Turn off the flame and bring out the tin.
  12. Cut into pieces.
  13. In a pan add 1 tsp oil and heat it.
  14. Now add black mustard and roast it.
  15. Add 2 cup of water, sugar, salt and green chilli.
  16. Make a boil and turn off the flame.
  17. Add green coriander and mix in water.
  18. Let it a little bit cool.
  19. Now transfer this water on khaman and rest it for 5 minutes.
  20. After 5 minutes, khaman will be big in size.
  21. Place the pieces in a plate and serve.
