ABOUT Cinnamon Crumble Apple Pie RECIPE

A thick layer of finely textured crumb topping crowns a tall mound of delicious apple filling.

Ingredients Serving: 8

  1. for the crust:
  2. 1 1/3 cups all purpose flour
  3. 1/2 teaspoon salt
  4. 1/2 teaspoon sugar
  5. 1/4 cup (1/2 stick) chilled unsalted butter, cut into 1/2-inch cubes
  6. 1/4 cup frozen solid vegetable shortening, cut into 1/2-inch cubes
  7. 3 tablespoons (or more) ice water
  8. 1/2 teaspoon apple cider vinegar
  9. For the filling:
  10. 3 1/4 pounds (sweet) apples, peeled, cored, sliced 1/4 inch thick
  11. 2/3 cup sugar
  12. 2 tablespoons all purpose flour
  13. 2 teaspoons ground cinnamon
  14. 2 tablespoons unsalted butter, melted
  15. For the topping:
  16. 1 cup all purpose/plain flour
  17. 1/2 cup sugar
  18. 1/4 cup (packed) golden brown sugar
  19. 1 1/2 teaspoons ground cinnamon
  20. 1/2 teaspoon salt
  21. 6 tablespoons chilled unsalted butter, cut into 1/2-inch cubes
  22. Vanilla ice cream to serve

Instructions

  1. for the crust:
  2. Mix flour, salt, and sugar in large bowl.
  3. Add butter and shortening; rub in with fingertips until coarse meal forms.
  4. Mix 3 tablespoons ice water and vinegar in small bowl to blend.
  5. Drizzle over flour mixture; stir with fork until moist clumps form, adding more water by teaspoonfuls if dough is dry.
  6. Gather dough into ball; flatten into disk.
  7. Wrap in plastic; refrigerate 30 minutes.
  8. Position rack in center of oven and preheat to 400° Fahrenheit
  9. Roll out dough on lightly floured surface to 12-inch round
  10. Transfer to 9-inch-diameter glass pie dish.
  11. Trim overhang to 1/2 inch; turn edge under and crimp decoratively.
  12. Refrigerate while preparing filling and topping.
  13. for the filling:
  14. Mix all filling ingredients in large bowl to coat apples.
  15. for the topping:
  16. Blend first 5 topping ingredients in processor.
  17. Add chilled butter cubes; using on/off turns, cut in until mixture resembles wet sand.
  18. Toss filling to redistribute juices; transfer to crust, mounding in center.
  19. Pack topping over and around apples.
  20. Bake pie on baking sheet until topping is golden, about 40 minutes (cover top with foil if browning too quickly).
  21. Reduce oven temperature to 350° Fahrenheit
  22. Bake until apples in center are tender when pierced and filling is bubbling thickly at edges, about 45 minutes longer
  23. Cool until warm, about 1 hour
  24. Serve with ice cream
