Inspired from the famous 'Pigs in the Mud pool' cake. This time pigs are enjoying in the cream cheese mud with the red velvet brick well :smiley:

Ingredients Serving: 10

  1. For Red Velvet Cake - This recipe is taken from the food network's Southern red velvet cake. Here is the link for it. http://www.foodnetwork.com/recipes/southern-red-velvet-cake-recipe.html I made 2 cakes using double quantity given in the recipe in order to give more brick well appearance.
  2. Vegetable oil for pans
  3. Maida - 2.5 cups
  4. Sugar - 1.5 cups
  5. Refined oil - 1.5 cups
  6. Baking soda - 1tsp
  7. Salt - 1tsp
  8. Cocoa powder - 1tsp
  9. Food colour (Rose red) - 1 tsp
  10. Eggs - 2 large
  11. White distilled vinegar - 1 tsp
  12. Vanilla extract - 1 tsp
  13. For cheese bricks -
  14. Cheese cubes for covering the bottom of the wall
  15. For Cream Cheese mud -
  16. Cream Cheese - 200g
  17. Sugar - 100g
  18. Butter - 50g
  19. For the pigs -
  20. Rolled fondant - 50g
  21. Food coloring (Red rose) for mild pink colour.

Instructions

  1. For Red velvet cake - http://www.foodnetwork.com/recipes/southern-red-velvet-cake-recipe.html
  2. Preheat the oven at 180 degree C. Grease and dust a cake pan.
  3. In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In another large bowl, whisk together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
  4. Using a standing mixer, mix the dry ingredients into the wet ingredients until just combined and a smooth batter is formed.
  5. Pour the cake batter into the pan and bake until the cake pulls away from the side of the pans, and a toothpick inserted in the center of the cakes comes out clean, about 30 minutes.
  6. Remove the cake from the oven and run a knife around the edges to loosen it from the sides of the pans. Let it cool completely. Credits - Southern red velvet cake, The Food Network.
  7. Cream cheese mud -
  8. Mix cream cheese, sugar and butter together till it is properly blended.
  9. Assembly -
  10. Place a red velvet cake on the dish. Cut out the inner portion of the second red velvet cake in order to make it look like a well and then place it on the top of the first red velvet cake.
  11. Pour the cream cheese mud into the well of the red velvet cake.
  12. Cover the outer bottom part of the well with cheese cubes, for giving the white tiles look.
  13. Fondant pigs-
  14. Make pigs out of the rolled fondant and place them on the cheese mud. The pigs were done as per the tutorial on the YouTube, as per the link given below. https://m.youtube.com/watch?feature=youtu.be&v=Jh-3BjdIVoU
  15. With cream cheese in the piping bag, give the brick effect to the red velvet well.
  16. Enjoy the piggie dance in the cheesy red velvet brick well!
