Clean and poke the potatoes with a fork
Boil the potatoes in microwave for about 5 minutes or until done.
Peel and mash the potatoes nicely.
Add salt, black pepper and mix.
Make a hole in the centre and add one egg.
Incorporate the egg nicely to the mashed potatoes.
Now add 1 cup of Maida or all purpose flour and mix well.
Slowly incorporate the flour to make a soft dough.
Don't over knead the dough.
Transfer the dough to a dusted work surface and divide into four portions.
Take a portion and roll with palm and fingers toake a long roll.
Cut the roll in cross section to make small pieces.
Take a clean fork and press each gnocchi to make some indentation
Following the same steps make all the gnocchi.
Heat sufficient water to boil the gnocchi. Add salt.
When water starts boiling add the prepared gnocchi.
Don't overcrowd the pan. Remaining gnocchi you can boil in next batch.
Boil them for about 5-6 minutes.
Drain in a colander and rinse with cold water.
Heat 1 tablespoon of butter in a non stick pan.
Saute the boiled gnocchi for about 5 minutes.
For the sauce heat 1 tablespoon of butter.
Add chopped onions and fry till light golden brown..
Add Ginger-Garlic paste and saute for a minute.
Add chopped tomatoes and stir for a minute.
Add turmeric powder, coriander powder and salt. Mix well.
Add little water and cook till tomatoes are cooked completely.
Let the mixture cool for a while and grind it to a fine paste.
Also make a fine paste of soaked cashew nuts.
Heat 1 tablespoon of butter in a pan.
Splatter cardamom, cinnamon, cloves and bay leaf.
Pour the onion- tomato mixture .
Add Kashmiri chilli powder and salt (if necessary). Cook for few minutes.
Add cashew paste and sugar.
Add the sauted gnocchi.
Mix well. Also add kasuri methi.
Check the seasoning and adjust the consistency. Remove from heat.
Transfer to serving plates , garnish with fresh cream and some green leaves and serve immediately.
