A one pot healthy dish with southern flavours

Ingredients Serving: 4

  1. Elbow pasta - 200 gms
  2. Carrots - 3 cut into thin small pieces
  3. Beans - 10 cut into thin small pieces
  4. Bell peppers (Red,green& yellow)1 each cut into thin small slices
  5. Onion - 1 cut into slices
  6. Fresh grated coconut- 1 cup
  7. Green chilly - 4 (adjust to taste)
  8. Turmeric powder- 1/2 tspn
  9. Jeera- 1/2 tspn
  10. Curd - 1/2 cup
  11. Coconut oil- 1 tbspn
  12. Curry leaves - few
  13. Salt to taste
  14. Water as per requirement

Instructions

  1. Take a vessel keep water to boil and later once it boils put the pasta in it...Drain it and keep aside
  2. Picture of the cut vegetables
  3. Picture of the cut bell peppers
  4. Now put about 1 and half glass water in a kadhai and let it boil
  5. Then add the chopped beans,carrot and onion
  6. Let it boil for a few minutes
  7. In the meantime put the coconut,green chilly and jeera in a mixer jar and grind it for a minute
  8. Then add the curd and make a smooth paste
  9. After that check the vegetables in the kadhai...
  10. Now add the chopped bell peppers,salt and turmeric powder....Add little more water if required and boil for 5 minutes...
  11. Check in between... Do not overcook the vegetables
  12. Then add the ground mixture to the kadhai... Mix well...
  13. Check salt ....Add if required... Similarly add water and bring to required consistency.
  14. Now add the boiled pasta to this gravy....Mix carefully
  15. Bring to a boil
  16. Put curry leaves and coconut oil.Turn off the gas
  17. Serve hot
