ABOUT Kerala Stew RECIPE

It is a lightly spiced and aromatic stew with mixed vegetables and coconut milk.It is a popular stew from the Kerala cuisine

Ingredients Serving: 4

  1. 2 Carrots (small) chopped
  2. 2 Potatoes chopped
  3. 1 cup Peas
  4. 80gms French Beans
  5. 6 Shallots sliced
  6. 2 1/2 cups Coconut milk (thin)
  7. 1 cup Coconut milk (thick)
  8. 4 Garlic crushed
  9. 1 tsp Ginger crushed
  10. 2 Green chilies sliced
  11. 1 inch Cinnamon stick
  12. 4-5 Cloves crushed
  13. 4 Green Cardamoms crushed
  14. 12 curry leaves
  15. 3 tbsp coconut oil
  16. 1 tsp Black Pepper
  17. Salt to taste

Instructions

  1. Heat oil in a pot. Add cinnamon, cardamoms, cloves and black pepper. Saute for a couple of minutes.
  2. Add the ginger, garlic, green chilies, sliced onions and curry leaves. Saute till the onions become tender.
  3. Add all the chopped vegetables and stir well.
  4. Add thin coconut milk. Cover the pan and cook till vegetables are tender and done.
  5. Add the thick coconut milk, stir well and simmer for a minute.
  6. Heat oil in a kadai and fry curry leaves till crisp. Season the stew with this.
  7. Serve kerala style vegetable stew with rice or appams.
