ABOUT Besan ki bharwan tikia RECIPE

It is my grandmother's recipe , my mom learnt from her and then i had learned from my mom . It is like a kachori stuffed with roasted besan , which can be stored for 15-20 days easily in an airtight container .

Ingredients Serving: 8

  1. For the Dough-
  2. 4 cups of maida
  3. 1/2 cup of sooji
  4. 3/4 cup oil for moyan
  5. Salt to taste
  6. Water as required to knead the dough
  7. For the stuffing-
  8. 2 cups of besan
  9. 3 tbsp oil
  10. 1 tsp crushed saunf or fennel seeds
  11. 1 tbsp kasoori methi
  12. 1 tsp red chilly powder
  13. 1 tsp dhania powder
  14. 1/2 tsp amchur powder
  15. Pinch of garam masala
  16. Pinch of heeng
  17. Salt to taste
  18. Take oil for deep frying

Instructions

  1. FOR MAKING THE DOUGH-
  2. Take a large mixing bowl.
  3. Add Maida , sooji , salt and oil.
  4. Rub with your fingers.
  5. Make sure that oil mixes well with maida.
  6. Now add water little at a time.
  7. And knead a medium tight dough.
  8. Keep the dough for half an hour then leave to rest.
  9. FOR THE STUFFING-
  10. Heat oil in a pan and add saunf.
  11. Next add Kasoori methi and heeng.
  12. Saute for a few seconds.
  13. Then add besan.
  14. Roast the besan on low heat.
  15. Until changes colour.
  16. An aroma should come out of it.
  17. When done , switch off the gas.
  18. When it cools down completely, then add red chilly powder.
  19. Add Dhania powder and amchur powder.
  20. Then add Garam masala and salt.
  21. Mix them very nicely .
  22. The stuffing is ready.
  23. FOR MAKING THE TIKIAS-
  24. Make medium sized balls from the dough.
  25. Now slightly roll out the balls.
  26. Now take each rolled out ball .
  27. Place the stuffing in the center.
  28. Seal it properly , by folding.
  29. Check from from all the sides.
  30. So that the stuffing doesn't come out.
  31. Fry all the tikias.
  32. In this way make all the balls.
  33. In the meantime heat oil for deep frying .
  34. First on high , then make it Medium.Now slightly roll the stuffed balls and deep fry.
  35. It should be medium thick.
