ABOUT Besan ki roti ka bharta RECIPE

Some food you grew up eating, made for generations. My mother I saw making these besan ki roti on chulha to prepare bharta, that earthy taste and heavenly aroma of mustard oil with just a few ingredients. Time changed, my elder sisters made it though there were no chulha or segdi but taste was still to die for. Sharing this family recipe from the cuisine of BIHAR that I love and you will love too.

Ingredients Serving: 4

  1. 1 cup besan/chickpeas flour
  2. 2-3 green chillies
  3. 6 garlic cloves
  4. 2 tbsp Mustard Oil
  5. 1 medium piece mango pickle with masala
  6. Salt to taste
  7. Coriander leaves

Instructions

  1. Add salt to besan and knead the dough
  2. Devide the dough in 2 parts, roll thick roti.
  3. cook it on hot pan on slow flame, press it with a ladle so that thick besan roti gets cooked properly, now roast on fire for a while like how fulkas are made. Similarly make second roti too
  4. Once roti is slightly cool, crumble it with your fingers
  5. Mash mango pickle piece, discarding the middle hard part, add it to crumbled roti along with some pickle masala
  6. Add chopped garlic and green chillies
  7. Add mustard oil and salt. Mix well. Garnish with fresh coriander leaves
  8. It tastes great with hot-hot dal rice.
