ABOUT Mamidikaya Pachi Pulusu RECIPE

This is a raw mango ...no cooking rasam recipe that is traditionally made by Telanganites and has been inherited from ancestors..Pachi pulusu meaning raw rasam is mainly made of two kinds one with tamarind and the other using Raw mango.. This tangy and sweet rasam goes well with hot rice and surely awakens your pallette !!

Ingredients Serving: 6

  1. 2 nos : Raw mangoes / Kairi
  2. 2 cups : Water
  3. 1 small : Onion chopped
  4. 2 nos : Dry red chillies
  5. 2 nos : Green chillies slit
  6. 1 tsp : oil
  7. 1/4 tsp : Mustard seeds
  8. 1/4 tsp : Cumin seeds
  9. few curry leaves
  10. Few sprigs coriander chopped
  11. Salt to taste
  12. 2 tbsp : Sugar / Jaggery

Instructions

  1. Boil the raw mangoes using 2 cups of water in a pressure cooker until soft and mushy.
  2. Later cool them at room temperature and using a strainer extract its pulp by discarding its skin and seeds, set aside.
  3. In a small sauce pan add oil, once hot add the mustard, cumin seeds and allow them to splutter.
  4. Later add the red chillies , green chillies , curry leaves and saute for a minute and turn off the heat..
  5. Now remove the mango pulpy broth into a bowl and add half cup of water to it and adjust its consistency to pouring.
  6. Next add the tempering prepared along with salt , sugar , chopped onion and coriander, give it a good stir.
  7. Mamidikaya pachi pulusu is ready to be served with hot rice !!
