ABOUT Ghever RECIPE

Ghever is royal sweet of Rajasthan. Festival is incomplete without this crunchy and soft sweet. I made it with twist of caramel flavor syrup by adding in chasni and pouring on top with rabdi. It is superb in taste.

Ingredients Serving: 4

  1. For ghever :-
  2. Maida 2 cup
  3. Ghee 1/2 cup
  4. Cold milk 1/2 cup
  5. Chilled water 3 glass (for pouring consistency)
  6. Ice cubes 4 to 5
  7. Ghee for deepfry
  8. For syrup :-
  9. Sugar 1 cup
  10. Water 1 cup
  11. Caramel flavor syrup 1 cup
  12. For serving :-
  13. Rabdi 2 cup
  14. Caramel syrup 1/2 cup
  15. Crushed Pista 7 to 8
  16. Chopped rose patels for garnish

Instructions

  1. In a bowl add ghee along with ice cube.
  2. Rub it gently with your hand and make a smooth paste.
  3. When ghee turns white in color and little thick in texture remove ice cubes and rub again.
  4. Add flour into the bowl and mix with your finger tips.
  5. Now add cold milk and again mix with fingers.
  6. Now add chilled water little by little and rub the flour mixture with palm.
  7. Add all the water and make batter for ghever without any lumps.
  8. Batter must have easily pouring consistency for ghever.
  9. Now add ghee in deep and heavy bottom pan for deepfry.
  10. In between keep pan on flame and wait for perfect temperature.
  11. When ghee is enough hot fill the batter into the bottle and pour into the pan little by little.
  12. Repeat this pouring process 10 to 12 time.
  13. Press down the Ghevar and fry till it turn in golden brown in colour and crisp.
  14. When it done remove from pan carefully and leave aside. Make all ghever in same way.
  15. For syrup mix 1 cup sugar and 1 cup water on low heat.
  16. Boil till 1 string consistency is archieved. Then add caramel flavor syrup and bring it to boli for 5 minute more.
  17. Remove from heat and pour 2 + 2 tablespoon of sugar syrup on top of the Ghevar. Make all the same way.
  18. For serving take a ghever in serving plate. Pour rabdi on it sprinkle some crushed pista and chopped rose petals.
  19. Pour some caramel syrap on top.
  20. Enjoy your festival with this royal sweet with new flavor.
