ABOUT Rajasthani Ghever RECIPE

Ghever is a traditional Rajasthani delicacy which is mostly relished in Sankranti, Holi & Raksha-bandhan. Crispy honeycomb dipped in flavourful sugar syrup is worth.

Ingredients Serving: 6

  1. 2 cups All purpose flour
  2. Ghee 1/4 cup + 2 tsp
  3. Ice cubes 10
  4. Milk 1/2 cup
  5. Lemon juice 1 tsp
  6. Cold water 4 cups
  7. Oil/ghee for deep frying
  8. For Sugar Syrup:
  9. Sugar 2 cups
  10. Water 1 cup
  11. Saffron
  12. Cardomom powder

Instructions

  1. Take a large bowl, add ghee to it & add about 8-10 ice cubes.
  2. We need to whip it till it takes on a cream like consistency.
  3. The ghee now looks like cream, we can remove the ice cubes.
  4. Now whip it again with your hand, till it reaches a very shiny and smooth cream like texture.
  5. Add flour in small batches to the creamed ghee.
  6. Add little milk & mix well. Make sure no lumps formed or broke if any limos formed.
  7. Add water slowly & whip the mixture well about 5 minutes.
  8. To the whipped batter, add the lemon juice. This helps to bind it.
  9. Now, as the batter is ready & it has a pour in thin consistency.
  10. It is highly advisable to keep the batter in refrigerator for about 10 minutes until the ghee/oil gets heated up.
  11. Take deep vessel & fill vessel with oil little less than half filled vessel.
  12. Now oil has started smoking,
  13. Start pouring spoonful batter using a big laddle full in the center.
  14. Make a little space in the center using knife. Pour the batter in thin stream from a little height, only in the center of the vessel.
  15. Once you have poured enough batter for the fever, immersed ghever in the oil.
  16. Take a knife/rod & release the fever out of the hot oil/ghee.
  17. As the ghevers are ready & cooling.
  18. Make the sugar syrup by adding sugar, water, saffron, cardamom powder to 1 string consistency.
  19. Once the syrup is ready, pour it on top of the ghevers& repeat the same once again after 10 minutes.
  20. Garnish the almonds, pistachios.
  21. Serve in two ways, with or without rabri, both taste awesome, so enjoy easy recipe of Ghever at home.
