Ghevar is a Rajasthani traditional sweet dish.

Perfect traditional dish.
Prepare sugar syrup of 1 thread consistency.
Take ghee in a large wide bowl.
Add one ice cube at a time to the ghee.
Make the ghee smooth.
Take more ice cubes as required, till ghee becomes very white.
Add maida and a cup of milk to it. Mix to make smooth batter and add more milk, if required.
Batter should be fairly thin (it should run off easily when poured from a spoon).
Take an aluminium or silver container. The height of the container should be at least 12 inches. Fill the container half with ghee and heat it.
When the ghee is smoky hot, take a large spoon of batter. Pour it in the centre of ghee and allow foam to settle. Pour one more spoon in the hole formed in the centre.
When foam settles again, loosen ghevar with a knife inserted in the hole. Lift ghevar carefully and place on a wire mesh to drain. Keep the hot sugar syrup in a wide flat bottomed container. Dip ghevar in it for 5 minutes. Remove and keep aside on the mesh to drain excess syrup.
Alternatively pour sugar syrup evenly all over, keeping the ghevar on a mesh placed over a container. Cool for sometime and top-up with silver foil.
Sprinkle some chopped dry-fruits and cardamom powder on the ghevar.
