ABOUT Milk Pudding or Milk Cake RECIPE

It's also known as Kharvas, Junnu or Ginnu. Traditionally it's made out of cow's colostrum milk, which means cow's first milk. But I've made with full cream milk. It's heavenly delicious.

Ingredients Serving: 5

  1. Thick curd - 3/4 Cup
  2. Full cream milk - 3/4 Cup
  3. Condensed milk - 3/4 Cup
  4. Corn Flour - 2-3 tsp
  5. Cardamom Powder - 1/2 tsp
  6. Pistachios - for garnishing (optional)

Instructions

  1. Take thick curd, full cream milk and condensed milk in a bowl.
  2. Add corn flour and beat the mixture nicely so any lumps can't perform.
  3. Add cardamom powder and mix well.
  4. Now put this mixture in a tiffin box or any suitable and preferable bowl which one you can keep inside the steam.
  5. Either you can use a steamer and put the box or bowl of mixture inside the steamer. Or you can use a wide pressure cooker as a steamer and put a wire rack inside of it. Then place the box or bowl of mixture top of that wire rack.
  6. Fill the steamer or pressure cooker with couple cups of water. Make sure water shouldn't go inside the box of mixture. So use sensible amount of water.
  7. Put your gas flame on medium.
  8. Put the lead on of your steamer. If using a pressure cooker then take the whistle off first. Then turn the lead on of your pressure cooker.
  9. Steam for about 40-45 mins. Prick with a toothpick, if it's come out clean and clear that means it's ready. If not then steam bit longer.
  10. After steaming put the tiffin box on room temperature for cool down a bit. Then put inside the fridge for about half an hour to set, that will be very helpful before cutting.
  11. Cut into pieces as per your desire and garnish with chopped pistachio and enjoy.
