In Gujarat Bajri wada are very popular. I have made them more healthy by adding other flours.
I really want to try this.
Take all the flours in a bowl.
Add ginger, garlic and green chillies.
Add salt, turmeric, red chili powder.
Add coriander powder, Ajwain and sesame seeds.
Mix jaggery with 1/4 cup curd.
Add in flour mixture.
Add 2 tbsp oil.
Mix everything well. Check the consistency and add curd if you can adjust.
Add water if needed. The dough should be like roti flour .
Cover it for 10 minutes. The dough will be softer because of jaggery and curd.
Keep oil in kadhai for frying.
In seasoning pan heat 3 tbsp oil. Add little 1/4 tsp red chili powder and add in flour mixture.
Mix immediately. Now take a small ball. Grease your fingers.
Pat between fingers and make Wadaas.
Drop directly in hot oil in a pan.
After turning lower the heat to medium.
Fry golden. You need to be quick as flour may get loose.
Keep some the mixture of the flours used , if flour become loose and difficult to manage, you can add some.
Adjust masala in that case.
Enjoy your wada with cup of tea / Coffee.
