I think our grannys were master in home remedies, whenever i used to get sick she used to give her home remedies and this always turned like a magical wand!So here is a recipe i have learned from her specially for diabetic patients thats Raw mango stuffed karela which is not at all bitter in taste and i was wondering that my hubby has started eating karelas !Thanks to my granny for this!

Ingredients Serving: 3

  1. 250 grams karela
  2. 1 medium sized raw mango(grated one)
  3. 2 medium sized onions(grinded one)
  4. 2 tbsp Fennel seeds(moti saunf)
  5. 1 tsp cumin seeds
  6. 1 tsp red chilli powder
  7. 1 tsp turmeric powder
  8. 1 tbsp coriander powder
  9. half tsp dry mango powder
  10. Half tsp sugar
  11. salt as per taste
  12. Oil for frying

Instructions

  1. Firstly take the karelas, peel their skin and slit it from the center.
  2. Now take a bowl add 1 tbsp salt in the karelas and keep them for 2 hours at least.
  3. For the masala - Take a wok add oil in it
  4. Add fennel seeds and cumin seeds together.
  5. Now stir it for 2 to 3 minutes.
  6. Add grated onions in the wok.
  7. Saute it for 5 minutes
  8. Add grated raw mango
  9. Now add all the dry masala Sugar salt red chili powder mango powder coriander powder turmeric powder and stir it well.
  10. Stir the masala on a slow flame till it gets brown .
  11. Now when the masala starts leaving oil it means its ready.Keep aside let it gets cool.
  12. After 2 hours take the karelas and wash them in running water, strain the water and wipe them with a kitchen cloth and stuff the ready masala into it.
  13. Take white thread and roll it on the karelas to bind the masala.
  14. Now take the same wok add more oil if needed and put the stuffed karelas into the wok and fry them on low flame.
  15. Keep on turning the sides so that every side should get fried.
  16. Now take the rest of the ready masala and you can mix it into the karelas.
  17. Enjoy it with crispy parathas..
