ABOUT Stuffed Karela Fry RECIPE

Sweet memories of bitter delights!!! Stuffed Karelas and parathas were most prefered dish for long train journeys in India in childhood. Although mum would make on regular days, having it during those trips has its own charm. Along with variety of savouries, sweets and snacks for travel these have left a sweet memorable mark. Cherishing those moments, tried my hands on stuffed Karelas. Now its a favourite with in-laws too .

Ingredients Serving: 4

  1. Bitter gourd/ Karela 1kg
  2. Onion 4small or 3 medium
  3. Ginger garlic paste 2tbspn
  4. Chilly powder 2 to 3tspn
  5. Coriander powder 2tspn
  6. Dry mango powder/Amchur 1/2tspn
  7. Turmeric powder 1/4 tspn
  8. Garam masala 1/4 tspn
  9. Salt according to taste

Instructions

  1. Scrape the karela lightly. Wash thoroughly. Pat dry and set aside. Make a long slit keep sides intact, remove the seeds. Do not remove if seeds are tender.
  2. Take 1tspn salt and apply on Karelas. Set aside for 20 minutes. Wash off excess salt.
  3. Make a fine paste of onions. In a thick non stick wide vessel add sufficient oil. Fry onion paste on medium flame till you get light golden colour. This takes a bit longer and needs constant stirring. At this stage onion paste will comes together as a ball. Add ginger garlic paste and saut. Add spices and continue to fry for few seconds on low flame. Transfer this mixture to a plate.
  4. Add few spoons of oil to the same vessel and fry Karelas till half done. Transfer to a plate. Divide the onion mixture and stuff in Karelas carefully. Its optional if you want to tie these with thread.
  5. Fry on low flame turning sides till fully cooked.
  6. Serve hot with roti/ parathas.
