ABOUT Maddur Vada RECIPE

Maddur vade, is a savoury fritter-type snack from South India. Also known as Maddur vada, this snack derives its name from the town of Maddur which is in the Mandya district of Karnataka. My co siste's mom who hails from Hindupur ( at the borders of A.P and kartnataka ) introduced me to this dish ..and since the time i had the first bite of it i fell in love with its texture and flavors.

Ingredients Serving: 10

  1. 2 cups : Maida / All purpose flour
  2. 1 cup : Chiroti rawa / Fine sooji
  3. 1/2 cup : Rice flour
  4. 2 tbsp : Ghee / Clarified butter
  5. 1 tbsp : Cumin seeds
  6. 6 to 8 nos : Green chillies crushed
  7. Handful : Mint leaves , finely chopped
  8. Handful : Cilantro / Coriander leaves finely chopped
  9. 1 large : Onion finely chopped
  10. Few curry leaves chopped
  11. Salt to taste
  12. Water as required
  13. Oil for Deep frying

Instructions

  1. In a deep mixing bowl add the all purpose flour , chiroti rawa , rice flour , cumin seeds and ghee.
  2. With your fingers blend the ghee into the flours until it forms shortcrust texture...
  3. Next add the salt , chopped mint , coriander , curry leaves ,chopped onion , crushed green chillies and mix well.
  4. Now by adding water little by little knead this into a semi stiff dough.
  5. Cover this with a lid and set aside for 15 to 20 minutes.
  6. Later divide the dough into 24 equal balls.
  7. Now press and shape each dough ball into flat disc of 0.5 mm thickness on a greased ziplock.
  8. Meanwhile start heat up the oil for deep frying.
  9. Slowly lift the disc and drop into the hot oil along the sides of the pan.
  10. Fry them on moderately hot oil until golden on both the sides.
  11. Later drain them on to a paper towel.
  12. Serve them hot with tomato ketchup or coconut chutney.
  13. The crispy exteriors and soft flavorful centers are droolicious !!
