ABOUT Maddur Vade RECIPE

Maddur vade is a snack from South India. Maddur vada, this snack derives its name from the town of Maddur which is in the Mandya district of Karnataka.

Ingredients Serving: 10

  1. Rice flour 1 cup
  2. Fine variety rawa 1 cup
  3. Maida - 1 cup
  4. Green chilli - 3-4
  5. Coriander handful
  6. Curry leaves handful
  7. Onion medium sized - 2
  8. Salt to taste
  9. Oil
  10. Jeera 2 tsp
  11. Asafoetida 2 generous pinch

Instructions

  1. Finely chop onions.
  2. Clean and finely chop green chilli, coriander and curry leaves.
  3. In a bowl add all the flour, jeera, onions, green chilli, curry leaves, coriander, salt to taste, Asafoetida and mix.
  4. Heat 2-3 tbsp oil and add it to the flour. Mix.
  5. Heat oil in a kadai for deep frying the vade.
  6. Take a small portion of the flour add water and mix.
  7. Make small balls of the mixed dough.
  8. On a small plastic sheet apply oil and gently press the ball and spread.
  9. Repeat the same for all the balls.
  10. Deep fry all the vade till crisp and golden brown on medium heat.
  11. Repeat the same with the rest of the vade mixture.
  12. Hot Maddur vade is ready to be served. Can be eaten plain or with Coconut Chutney.
