ABOUT Rice kheer / Payasam / pudding RECIPE

Rice payasam is my paternal grand ma's recipe which she preferred to prepare usually on fridays as prasad for God and we kids used to wait eagerly for the pooja to be done as quickly as possible so tgat we can hog on to prasad as this was one of our favorite desserts !! If you religious like me you will definetely agree with the fact that when a dish is tagged with the word Prasad it definetely tastes much better !! :grinning::grinning:

Ingredients Serving: 5

  1. 3/4 cup : Raw rice
  2. 3 to 3.5 cups : Whole milk
  3. 3/4 cup : Sugar or to taste
  4. Few roasted nuts of choice chopped
  5. 1 tsp : Cardamom powder
  6. A pinch Saffron

Instructions

  1. Wash the rice and soak in enough water for atleast half hour.
  2. In a deep pan add milk and bring this to a boil, once it boils add the soaked rice and stir.
  3. Now keep this on medium heat and continue cooking until rice is cooked and slightly soft to touch.
  4. Next add in the sugar , cardamom and saffron.
  5. Continue cooking until the sugar is dissolved and slightly thick pudding like consistency.
  6. Later turn off the heat and garnish with roasted and chopped nuts of choice.
  7. Silky , creamy and sweet Rice kheer / payasam is ready to be served !! The saffron and cardamom just enhance its richness further more !!
